Destilería was created around a simple conviction: an exceptional bottle deserves to be understood, not merely displayed. We bring selection, knowledge, hospitality and art together so every visit can become a genuine encounter with Mexico.
WHY DESTILERÍA EXISTS
A place between the bottle and the story behind it.
Tequila carries landscape, time and human decisions inside every glass. Yet too often, those details disappear behind a label or a quick pour.
Destilería gives them room. Our collection is considered expression by expression; our Maestros translate craft into conversation; and our space invites guests to slow down, look closely and discover what speaks to their own palate.
We do not want to tell you what to like. We want to give you everything you need to discover it.
THE JOURNEY BEHIND THE COLLECTION
Knowledge learned at the source.
The story begins with the owner’s training as a Maestro Catador. He specialized in understanding and explaining the differences among tequila, mezcal and raicilla, as well as the fermentation processes that give each spirit its identity.
His learning took him directly to Arandas and Tequila, Jalisco. There, he traveled through the region, met with local people and toured alongside them.
He personally selected and brought to this shop each of the tequilas currently on display. For that reason, the collection does not begin on a shelf: it begins in the region, with its people and with the knowledge behind every bottle.

In Cabo San Lucas—where desert, sea, visitors and local life meet—Destilería offers a more intimate way to connect with Mexico. The shop at Plaza del Sol is both a collection and a meeting place: a point of departure for remarkable bottles, guided tastings, original art and generous conversation.
